Caito’s Sicilian Restaurant & Pizzeria Reflects Family’s Proud HeritageBy Betsy Zatkulak
“Our heritage is Italian and Sicilian, and we wanted to bring our recipes and what we have to offer to the public,” said Dave Caito, Caito’s owner. “Of course, there are a lot of great Italian restaurants out there, but we have a different product - a very good product - and we want to share the experience.” Caito said, one difference between Sicilian-Italian, or Southern-Italian, food and Northern-Italian food is the heat. “Ours is a little bit spicier,” Caito said. Open for lunch and dinner with late-night hours, Caito’s boasts a variety of rustic, made-to-order appetizers, salads, sandwiches, pasta dishes, pizzas and specialties. And just like at home, only the highest quality ingredients will do for Caito’s authentic family recipes prepared at the restaurant. Classics like Beef or Chicken Spiedini and Caito’s Steak Modiga, (a 14-oz., USDA choice steak brushed with olive oil and cloaked in Italian bread crumbs and melted fontina and partnered with a white wine sauce), or handmade tortellini filled with beef, prosciutto, fresh mushrooms and vegetables with a creamy, sun-dried tomato pesto sauce, are just some of the Sicilian-influenced dishes that have guests coming back for more. Caito’s’ pizzas, cooked the traditional way on fire brick, earn crave-worthy status. Take the Spinjuine: The time-honored Sicilian 14-inch thick archetype of silky bread dough covered with spicy tomato sauce, sausage, ground beef and onions, then topped with a final round of fresh basil, tomato, mozzarella and provolone cheeses, cannot be found in any other restaurant in the St. Louis area—except for Caito’s Pizzeria—the Caito family’s first culinary venture, located in Chesterfield. Other pizzas include the Spinach Artichoke, Volozzi Margherita, Italian Meatball, and the Sicilian. Caito’s interior inspires a casual, old-world Tuscany experience of warmth and relaxation everyone can enjoy. Family photos dating back to the 1930s and Italian music pay tribute to the culture and lifestyle that inspired the Caitos to bring the best of Italy to St. Louis. Equally charming is Caito’s bar, which seats 45 and features full-service dining. Dark and rich with mahogany wood, Caito’s bar beckons patrons to linger over a martini and bruschetta, perhaps, or to indulge in a reasonably-priced glass of cabernet while sharing a plate of linguini. Take-out and full catering also are available. Patio dining is planned for next spring. Caito’s Sicilian Restaurant & Pizzeria is a place where family, food and tradition go hand in hand. “Everybody’s just like family here - eating, laughing and talking – and that’s the way it should be” Caito said.
